{"id":11047,"date":"2024-12-13T15:46:43","date_gmt":"2024-12-13T14:46:43","guid":{"rendered":"https:\/\/theblackfig.com\/?p=11047"},"modified":"2025-09-22T11:59:48","modified_gmt":"2025-09-22T09:59:48","slug":"italienische-milchreise-tarte-ricotta-rosinen","status":"publish","type":"post","link":"https:\/\/theblackfig.com\/de\/2024\/12\/italienische-milchreise-tarte-ricotta-rosinen.html","title":{"rendered":"Italienische Milchreis-Tarte mit Ricotta und Rosinen"},"content":{"rendered":"<h2 style=\"text-align: center; font-size: 18px;\">Die Italienische Milchreis-Tarte mit Ricotta und Rosinen ist ein beliebter Geburtstagskuchen in meiner Familie und von einer toskanischen Spezialit\u00e4t, dem \u201eBudino di riso\u201c, inspiriert.<\/h2>\n<p>Das Rezept f\u00fcr die italienische Milchreis-Tarte ist das Ergebnis mehrerer Versuche, eine toskanische Spezialit\u00e4t, den so genannten \u201eBudino di riso\u201c, im gro\u00dfen Stil nachzubacken, indem man ihn in eine echte Tarte verwandelt und mit Ricotta und Rosinen anreichert.<\/p>\n<p>Seit einigen Jahren ist der <strong>Tag der Heiligen Lucia<\/strong> (13.12.) der Tag des Reiskuchens. Es ist in der Tat ein besonderer Geburtstag und das <strong>Geburtstagskind<\/strong> (mein Vater) mag insbesondere diese <em>crostata<\/em>, die meine Mutter jahrelang f\u00fcr ihn zubereitet hat. Hier in der Toskana bieten Bars und Konditoreien zum Fr\u00fchst\u00fcck neben <em>Cornetti<\/em> und <em>Sfoglie<\/em> oft eine weitere S\u00fc\u00dfspeise an, den so genannten &#8222;Budino di riso&#8220;, meinen Favorit. Inzwischen weiss ich, welche Konditoreien in der Gegend ihn nach meinem Geschmack zubereiten.<\/p>\n<p>Mit dem <strong>Reispudding<\/strong>, einem L\u00f6ffeldessert, hat diese toskanische Spezialit\u00e4t wenig zu tun. Es handelt sich vielmehr um eine Art kleine Tarte, die mit einer Reiscreme gef\u00fcllt und meist mit Vanille aromatisiert ist. Der M\u00fcrbeteig muss sehr gut sein, d. h. kr\u00fcmelig und butterig. Der im Ausland bekanntesten Risotto ist vielleicht der <em>Risotto alla milanese<\/em> (Risotto mail\u00e4ndischer Art). F\u00fcr die Zubereitung eines echten Risottos werden jedoch <a href=\"https:\/\/www.riso.ch\/de\/reis\/reissorten-reisprodukte\/italienische-kueche\/?oid=1910&amp;lang=de\" target=\"_blank\" rel=\"noopener\">verschiedene Reissorten<\/a> angebaut, vor allem in der Lombardei und im Piemont, wie Arborio, Ribe, Roma, Carnaroli usw.<\/p>\n<p>Wenn Du Dessert mit Reis magst, wird in der Toskana w\u00e4hrend der Osterzeit in den Gebieten um Carrara und Massa die <a href=\"https:\/\/theblackfig.com\/2017\/04\/torta-di-riso-carrarina-di-pasqua.html\">Torta di riso carrarina<\/a>
