Beide Hauptzutaten mag ich sehr: <strong>Tomaten als auch Reis<\/strong>. Im italienischen Sp\u00e4tsommer, der oft noch 32\u00b0 hat, ist ein leichtes Gericht wie dieses ein Genuss. Man kann sie nach eher traditionellen Rezepten wie diesem mit Reis oder Semmelbr\u00f6sel f\u00fcllen, oder sie in einer modernen Variante mit Bulgur, Couscous, Hirse, aber auch mit <a href=\"https:\/\/theblackfig.com\/de\/ricette\/italienische-ricotta-rezepte\">Ricotta<\/a> f\u00fcllen.<\/p>\n<p>Gef\u00fcllte Tomaten sind oft vegetarisch, aber manche f\u00fcgen Thunfisch hinzu oder Oma tut <em>acciughe<\/em> (Sardellen) hinein. Sie sollte nicht zu reif sein, da sie sonst beim Kochen ihre Form verliert und die F\u00fcllung ausl\u00e4uft, aber auch nicht zu unreif sein, da sonst der s\u00fc\u00dfe und aromatische Geschmack verloren geht.<\/p>\n<p>Wenn ich in ihrem Rezeptbuch bl\u00e4ttere, gehe ich auf die Suche nach Erinnerungen an vergessene Aromen, die ich manchmal wiederfinde (wie bei dem <a href=\"https:\/\/theblackfig.com\/2013\/05\/il-dolce-alle-mandorle-nonna-toscana.html\">Mandelpudding<\/a>, den ich so gerne mag). Die Erinnerung an einen Geschmack kann auch die Erinnerung an ein Bild aus der Vergangenheit ausl\u00f6sen, das durch die Jahre versch\u00fcttet wurde und das ich mit einem Gericht wieder auffrischen kann.<\/p>\n<p>Das Kochen kann dabei helfen, eine bestimmte Art von Staub zu entfernen, n\u00e4mlich den der Erinnerung.
