So gelingt Karamell ohne Klumpen.<\/h2>\n<p>Wenn Du Karamell selber machen m\u00f6chtest und noch kaum Erfahrung damit hast, brauchst Du ein gutes Grundrezept zusammen mit einigen <strong>Grundtipps<\/strong>. F\u00fcr alle, die zu Hause backen, kann die Zubereitung von Karamell ein Problem sein. Dabei gibt es so viele leckere<strong> Dessertrezepte, die Karamell enthalte<\/strong>n! Bereite alles Notwendige im Voraus vor (Kasserolle, eventuell eine Unterlage zum Ausgie\u00dfen usw.), da das fertige Karamell innerhalb weniger Sekunden aush\u00e4rtet. Verwende am besten einen <strong>Holzl\u00f6ffel<\/strong>, um das Karamell umzur\u00fchren.<\/p>\n<p><strong>Regel N. 2: die Zeit<\/strong><\/p>\n<p>Konzentriere Dich auf den Zucker! Wenn Du Karamell selber machen m\u00f6chtest, widme Dich der Zubereitung des Karamells, <strong>ohne Ablenkung<\/strong>, da die Karamellisierung ab einem bestimmten Punkt sehr schnell voranschreitet und die Gefahr besteht, dass das Karamell verbrennt. Und achte SEHR darauf, dass <strong>Naschkatzen<\/strong>, die Dir eventuell zusehen, nicht mit dem Finger hineinstecken, um es zu probieren. So habe ich es als Kind getan \u2013, angezogen von seiner sch\u00f6nen dunkelorangenen Farbe und seiner Konsistenz. Woran erkennt man, dass das Karamell angebrannt ist?<\/p>\n<p>Das Karamell ist angebrannt, wenn es eine braun-schwarze Farbe hat und stark raucht. Nach dem Abk\u00fchlen schmeckt es bitter und verbrannt. Ja, es gibt zwei Arten, Karamell herzustellen: ein nur aus Zucker bestehendes \u201etrockenes Karamell\u201c und das aus Zucker und Wasser bestehendes \u201efeuchtes Karamell\u201c.<\/p>\n<p>Ersteres wird vor allem f\u00fcr <strong>Krokant<\/strong> oder f\u00fcr sch\u00f6ne, mehr oder weniger z\u00e4he Dekorationen verwendet, h\u00e4rtet in wenigen Sekunden aus und karamellisiert sehr schnell (z.B.: Walnuss-Dattel-K\u00fcchlein mit Zimt), d. h. es kann sehr schnell verbrennen. Karamell mit Wasser wird f\u00fcr Saucen und Flans wie <strong>Creme Caramel<\/strong> verwendet, h\u00e4rtet etwas langsamer aus und karamellisiert ebenfalls etwas langsamer (z:b.: das Mandelpudding meiner Oma).<\/p>\n<p>Und jetzt ran an die Arbeit!
