So werden gebrannte Mandeln wie vom Weihnachtsmarkt!<\/h2>\n<p>Gebrannte Mandeln kenne ich vor allem von den deutschen Weihnachtsm\u00e4rkten, wo ich mir zusammen mit einem Glas Gl\u00fchwein \u2013 um die K\u00e4lte zu vertreiben, die mir in die Knochen kroch \u2013 eine rote T\u00fcte voll mit zuckrig glasierten Mandeln oder Haseln\u00fcssen nach Hause nahm. Sie sind ein fester Bestandteil meiner winterlichen Erinnerungen an <strong>die festliche Weihnachtszeit in Deutschland<\/strong>, die einfach viel stimmungsvoller ist als hier in der Toskana. Kein Wunder, dass Weihnachtsm\u00e4rkte mittlerweile in ganz Italien nachgeahmt werden, selbst in den w\u00e4rmeren Regionen. Bei den kandierten Fr\u00fcchten ist jede Haselnuss oder Mandel mit einer d\u00fcnnen, knusprigen Zuckerschicht \u00fcberzogen. Krokant hingegen besteht aus einem Riegel, in dem das Karamell die Trockenfr\u00fcchte miteinander verbindet.<\/p>\n<p data-start=\"423\" data-end=\"870\">In diesem Rezept wird <strong>das Karamell mit Wasser<\/strong> zubereitet, was bedeutet, dass dem Zucker etwas Wasser hinzugef\u00fcgt wird.
