Mir ist aufgefallen, dass ich, obwohl <strong>Frikadellen und Hackbraten<\/strong> zu meinen absoluten <strong>Lieblingsgerichten<\/strong> geh\u00f6ren, in all den Jahren noch kein Rezept f\u00fcr diese beiden <em>Comfort Food<\/em>-Gerichte auf meinem Blog ver\u00f6ffentlicht habe. Die Zubereitung ist nicht schwierig, man muss nur alle Zutaten im Voraus vorbereiten. Zuerst kocht man die Tomatensauce, dann bereitet man die Hackb\u00e4llchen zu. Sobald sie angebraten sind werden sie in der Tomatensauce fertig gegart. So entfalten sich alle Aromen.<\/p>\n<p>Einige Tipps f\u00fcr die Zubereitung von Hackb\u00e4llchen mit Ricotta und Oregano:<\/p>\n<ul>\n<li>Durch die Zugabe von Ricotta werden diese Fleischb\u00e4llchen besonders weich. Sie sollten daher sowohl beim Formen als auch beim Wenden im Topf vorsichtig behandelt werden.<\/li>\n<li>Die Hackb\u00e4llchen k\u00f6nnen im Voraus zubereitet werden, sogar am Vortag. Wenn due m\u00f6chtest, kanns du sie kochen und einen Tag lang im Topf ziehen lassen, Dabei sollen sie mit einem Deckel abgedeckt im K\u00fchlschrank aufbewahrt werden. Ich denke zum Beispiel an <strong>Falafel<\/strong>, vegetarische B\u00e4llchen aus Kichererbsen aus der nah\u00f6stlichen K\u00fcche. Ich war noch nie im Nahen Osten, habe aber in Paris, wo die nah\u00f6stliche K\u00fcche weit verbreitet ist (man denke an die franz\u00f6sische Kolonialgeschichte), ausgezeichnete Falafel gegessen.<\/p>\n<p>In der italienischen K\u00fcche hat fast jede Region ihre Frikadellen-Gerichte. Die Hackb\u00e4llchen meiner Mutter sind mein absolutes Lieblings-Comfort-Food. Auch ihr Hackbraten, den sie allerdings seltener zubereitet hat. Sie sind nicht nur sehr lecker, sondern haben auch einen unverzichtbaren emotionalen und pers\u00f6nlichen Bezug, der sie zu etwas Besonderem macht. Ich m\u00f6chte ihr Rezept bald auf dem Blog ver\u00f6ffentlichen, auch um eine greifbare Erinnerung daran weiterzugeben. In Rom habe ich sonst Fleischb\u00e4llchen aus gekochtem Fleisch (<em>Polpette di bollito)<\/em> \u00a0mit Tomatenso\u00dfe gegessen, die typisch f\u00fcr die r\u00f6mische K\u00fcche sind.<\/p>\n<p>Das Rezept f\u00fcr Hackb\u00e4llchen mit Ricotta und Oregano stammt von <a href=\"https:\/\/ottolenghi.co.uk\/\" target=\"_blank\" rel=\"noopener\">Yotam Ottolenghi<\/a>, der Frikadelle und Hackbraten sehr liebt.
