Meine Version ist vielleicht nicht ganz anders als die anderen, aber sie ist mir sehr ans Herz gewachsen. Der Teig ist ein klassischer Teig f\u00fcr S\u00fc\u00dfbr\u00f6tchen, verfeinert mit Rosmarin und Rosinen. Heute findet man diese Br\u00f6tchen \u2013 leider \u2013 nur noch selten in den B\u00e4ckereien rund um Florenz.<\/p>\n<p data-start=\"1277\" data-end=\"1480\">Vielleicht ist es f\u00fcr moderne Gaumen zu schlicht, genau wie der <strong data-start=\"1341\" data-end=\"1357\">Castagnaccio<\/strong>, ein weiteres altes, \u201earmes\u201c Geb\u00e4ck aus der Toskana. Aber gerade diese Einfachheit macht den Pan di Ramerino so besonders.<\/p>\n<p data-start=\"1482\" data-end=\"1744\">Die Wurzeln reichen bis ins <strong data-start=\"1510\" data-end=\"1525\">Mittelalter<\/strong> zur\u00fcck. Die Version, die wir heute backen \u2013 oft mit Zucker und manchmal auch mit Milch \u2013 ist etwas reichhaltiger und macht die B\u00f6tchen etwas weicher. Ich pers\u00f6nlich mag die <strong data-start=\"1663\" data-end=\"1702\">urspr\u00fcngliche Variante mit Brotteig<\/strong> lieber \u2013 ohne Milch, ohne Schnickschnack.<\/p>\n<p data-start=\"1746\" data-end=\"1995\">Traditionell wird Pan di Ramerino am <strong data-start=\"1783\" data-end=\"1801\">Gr\u00fcndonnerstag<\/strong> gebacken und in der Kirche gesegnet \u2013 ganz wie die Olivenzweige. Wenn du es zum ersten Mal backt, gebe ich euch aber ein paar kleine Hinweise mit, die dabei helfen k\u00f6nnten. Dieses Rezept stammt leider nicht von meiner Oma, sondern von einem florentinischen Konditor, bei dem ich vor vielen Jahren einen Patisseriekurs gemacht habe \u2013 in Florenz nat\u00fcrlich.<\/p>\n<ul>\n<li data-start=\"2380\" data-end=\"2717\">Schweineschmalz oder Butter? Traditionell wird <strong data-start=\"2398\" data-end=\"2417\">Schweineschmalz<\/strong> verwendet. Wenn due magst, kannst du ihr es durch Butter ersetzen \u2013 das ver\u00e4ndert den Geschmack und die Konsistenz ein wenig. Ich empfehle dir aber, wenn m\u00f6glich, <strong data-start=\"2577\" data-end=\"2634\">beim ersten Mal das Original mit Schmalz zu probieren<\/strong>. Ich finde, man sollte Rezepte zun\u00e4chst in ihrer urspr\u00fcnglichen Form kennenlernen.<\/li>\n<li data-start=\"2719\" data-end=\"2926\">Hefe aktivieren! Ein wichtiger Punkt: Der <strong data-start=\"2744\" data-end=\"2752\">Hefe<\/strong> sollte Zeit zum Aktivieren gegeben werden. Dazu einfach in etwas lauwarmer Milch mit einem halben Teel\u00f6ffel Zucker aufl\u00f6sen \u2013 das ist immer eine gute Idee bei frischer Hefe, denn der Zucker wecken die Mikroorganismen.<\/li>\n<\/ul>\n<p data-start=\"2928\" data-end=\"3097\">Diesmal ist meine Ladung ein bisschen \u201eknubbelig\u201c geworden \u2013 aber sch\u00f6n aufgegangen, weich, duftend,
