Dabei eignet es sich auch wunderbar f\u00fcr S\u00fc\u00dfes \u2013 sogar f\u00fcr Kekse. Lebovitz nennt seine Kekse \u201eItalian Polenta Cookies\u201c, was streng genommen nicht ganz korrekt ist, f\u00fcr Amerikaner oder Deutsche jedoch gut nachvollziehbar: Polenta wird sowohl als italienisches Gericht betrachtet als auch oft als Synonym f\u00fcr Maismehl verwendet.<\/p>\n<p>Tats\u00e4chlich ist <strong>Polenta<\/strong> in Italien ein Gericht, nicht blo\u00df eine Zutat. <strong>Maigrie\u00df<\/strong> ist die Hauptzutat von Polenta, die in kochendem Wasser unter st\u00e4ndigem R\u00fchren und m\u00f6glichst in einem Kupfertopf zubereitet wird. Diese Unterscheidung scheint selbst manchen Italienern nicht ganz klar zu sein, die sogar von \u201efarina di polenta\u201c sprechen. <strong>Maismehl<\/strong> ist noch etwas anderes, n\u00e4mlich feiner als Maisgrie\u00df.<\/p>\n<p>In Italien ist <a href=\"https:\/\/www.bzfe.de\/presse\/pressemeldungen-archiv\/polenta-das-maisgericht-aus-italien\" target=\"_blank\" rel=\"noopener\">Polenta<\/a> <strong>ein typisches Gericht aus den n\u00f6rdlichen Regionen<\/strong> wie dem Aostatal, der Lombardei und Friaul. Dort gilt Polenta traditionell als s\u00e4ttigendes Gericht und wird mit geschmortem Fleisch oder cremigen K\u00e4sesorten serviert. Als Arme-Leute-Essen reichte man fr\u00fcher nur Butter dazu.<\/p>\n<p>Es gibt einige bekannte italienische Kekse aus Maismehl, wie die venezianischen <em>Zaletti<\/em> und die piemontesischen <em>Paste di Meliga<\/em>. Diese Polenta-Kekse erinnern ein wenig an die <em>Zaletti<\/em>, sind jedoch etwas weniger m\u00fcrbe und daf\u00fcr ein wenig feuchter in der Konsistenz.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Wie_werden_die_Polenta-Kekse_gebacken\"><\/span>Wie werden die Polenta-Kekse gebacken?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Man kann die Kekse aus dem fertigen Teig auf zweierlei Weise formen. Die <strong>schnellste Methode<\/strong> ist, aus dem Teig eine Rolle zu formen und sie kaltzustellen, bis er fest ist. Dann schneidet man Scheiben von etwa 2 cm Dicke mit einem Messer mit glatter Klinge. Sobald sie gebacken sind, sehen sie so aus.<\/p>\n<p>Alternativ k\u00f6nnen sie auch so geformt werden, wie es im Rezept beschrieben ist.<\/p>\n<h4>Andere Rezepte mit Maisgrie\u00df oder mit
