Als Dessert stand auf der Speisekarte ein Geb\u00e4ck aus Filoteig, Honig-Butter-Sirup und Pistazien, eine Art <em>Baklava<\/em> (ein im gesamten Nahen Osten sehr verbreitetes Geb\u00e4ck).<\/p>\n<p>Filoteig erinnert am Teig der Fr\u00fchlingsrollen der chinesischen K\u00fcche, auch wenn es sich nicht um denselben Teig handelt. Es ist ein sehr vielseitiger Teig, der sich sowohl f\u00fcr s\u00fc\u00dfe als auch f\u00fcr herzhafte Rezepte eignet. <strong>Filoteig erinnert an Bl\u00e4tterteig<\/strong>, obwohl die zwei Teigsorten unterschiedlichen Ursprung und Zubereitung haben. Beide sind hauchd\u00fcnne Teigbl\u00e4tter, die nach dem Backen knusprig und m\u00fcrbe werden.<\/p>\n<p>Im Gegensatz zum Bl\u00e4tterteig ist Filoteig jedoch viel leichter, da er nur <strong>aus Wasser und Mehl<\/strong> besteht. Es werden also in dem Teig keine Butter oder andere Fette verwendet, die erst sp\u00e4ter hinzugef\u00fcgt werden, um ihn noch knuspriger zu machen.<\/p>\n<p>Bl\u00e4tterteig besteht indessen aus vielen Schichten von Grundteig (aus Mehl, Salz und Wasser) und Butter. Der Grundteig wird durch mehrfaches Ausrollen und Zusammenschlagen Ziehbutter eingearbeitet, so dass ein Teig mit mehreren Schichten entsteht (Grundteig-Butter-Grundteig-Butter usw.), die beim Backen aufgeht. Es gibt wohl Unterschiede z.B. zwischen deutschem und franz\u00f6sischem Bl\u00e4tterteig. <a href=\"https:\/\/www.youtube.com\/watch?v=Lg8YR6Xx0JE\" target=\"_blank\" rel=\"noopener\">Hier<\/a> kannst du das Thema vertiefen.<\/p>\n<p>Das Filo-Teig wird vor dem Backen reichlich mit \u00d6l oder geschmolzener Butter bestrichen, sonst schmeckt er nicht. Da der Teig sehr d\u00fcnn ist, muss er vorsichtig behandelt werden. Filo-Teig an sich ist wohl\u00a0 geschmacksneutral. Der Geschmack \u2013 ob s\u00fc\u00df oder herzhaft \u2013 wird erst hinzugef\u00fcgt, indem man ihn vor allem als <strong>H\u00fclle f\u00fcr Teigtaschen, Torten oder K\u00f6rbchen<\/strong> verwendet, die man mit Cremes wie Vanillecreme, wie in diesem Rezept, oder mit Gem\u00fcse, Hackfleisch, K\u00e4se usw. f\u00fcllen kann.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-3870\" src=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2016\/10\/pasta-fillo-ripiena-di-crema-e-more-1.jpg\" alt=\"Filoteig-K\u00f6rbchen gef\u00fcllt mit zarten Vanillencreme und Brombeeren\" width=\"680\" height=\"453\" srcset=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2016\/10\/pasta-fillo-ripiena-di-crema-e-more-1.jpg 680w, https:\/\/theblackfig.com\/wp-content\/uploads\/2016\/10\/pasta-fillo-ripiena-di-crema-e-more-1-272x182.jpg 272w, https:\/\/theblackfig.com\/wp-content\/uploads\/2016\/10\/pasta-fillo-ripiena-di-crema-e-more-1-300x200.jpg 300w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<h3 style=\"text-align: justify;\"><span class=\"ez-toc-section\" id=\"Filoteig-Koerbchen_richtig_backen\"><\/span>Filoteig-K\u00f6rbchen richtig backen<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Welche Fehler passieren h\u00e4ufig bei der Zubereitung von Filoteig? <strong>Das Zerrei\u00dfen des Filoteigs<\/strong> ist wohl was am h\u00e4ufigsten vorkommt. Hier sind meine Tipps, und es zu vermeiden:<\/p>\n<ul>\n<li>Bestreiche den Teig vorsichtig <strong>mit \u00d6l oder zerlassener Butter<\/strong>, damit er nicht rei\u00dft. Ich arbeite sehr gerne mit einem <strong>Silikonpinsel<\/strong>, der sanfter ist als ein herk\u00f6mmlicher Pinsel mit Borsten.<\/li>\n<li>Mehrere Schichten! Damit der Teig unter dem Gewicht der F\u00fcllung nicht rei\u00dft, empfiehlt es sich, f\u00fcr solche Teigtaschen <strong>mindestens 3 Teigbl\u00e4tter<\/strong> zu verwenden.<\/li>\n<li>Beim Filoteig-K\u00f6rbchen oder -Taschen backen, kannst du sie zum Verschlie\u00dfen K\u00fcchengarn oder einfach einen <strong>Zahnstocher<\/strong> verwenden (bei erstem besteht jedoch die Gefahr, dass der Teig beim Herausziehen etwas rei\u00dft).<\/li>\n<\/ul>\n<p>Noch zwei Tipps<strong> zu Aufbewahrung und zum Servieren<\/strong>.<\/p>\n<ul>\n<li>Der Teig trocknet leicht aus. Sollten Reste \u00fcbrig bleiben, wickel diese gut in Alufolie ein und bewahre sie im K\u00fchlschrank auf.<\/li>\n<li>Die Filoteig-K\u00f6rbchen sind d\u00fcnn und mit Vanillecreme gef\u00fcllt, die Feuchtigkeit abgibt. Am besten isst man sie sofort, also innerhalb der ersten Stunden nach dem Backen. Andernfalls werden sie weich und verlieren ihre Knusprigkeit.<\/li>\n<\/ul>\n<h3><span class=\"ez-toc-section\" id=\"Unterschied_zwischen_angebauten_und_wilden_Brombeeren\"><\/span>Unterschied zwischen angebauten und wilden Brombeeren<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>In der Region, in der ich aufgewachsen bin und in der ich lebe, sind Brombeeren eine sehr verbreitete Sommerfrucht. Ich meine damit nicht die angebauten Brombeeren, sondern die <strong>wildwachsenden Brombeeren<\/strong> (<a href=\"https:\/\/de.wikipedia.org\/wiki\/Mittelmeer-Brombeere\">Rubus<\/a>). Sie wachsen hier \u00fcberall. Man findet sie an den R\u00e4ndern von Schnellstra\u00dfen und Landstra\u00dfen, auf Feldern, an Fl\u00fcssen und in der N\u00e4he von freien Str\u00e4nden.<\/p>\n<p>Eine meiner liebsten Sommerbesch\u00e4ftigungen war und ist <strong>das Sammeln von wilden Brombeeren<\/strong>, einer meiner Lieblingsfr\u00fcchte. Das Pfl\u00fccken ist oft keine leichte Aufgabe, da es nicht nur Dornen gibt, sondern meist auch Tiere wie Spinnen und andere, die ihre Nester in den Brombeerstr\u00e4uchern bauen. Die M\u00fche lohnt sich jedoch: Ihr Geschmack ist <strong>s\u00fc\u00df und aromatisch, intensiv<\/strong>. Meist sind sie klein und wenn sie sehr reif sind, verschmutzen sie H\u00e4nde und Kleidung ordentlich!<br \/>\nDer Geschmack und die Gr\u00f6\u00dfe der wilden Brombeeren unterscheiden sich von denen der kultivierten Brombeeren, die gro\u00df und w\u00e4ssrig sind.<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-18204\" class=\"wprm-recipe-container\" data-recipe-id=\"18204\"
