Niemand hat gesagt, dass der Hamburger an sich eine ungesunde Art von Sandwich sei, noch dass man ihn essen sollte, ohne <strong>sorgf\u00e4ltig hochwertige Zutaten<\/strong> auszuw\u00e4hlen. Wenn das Konzept des Fastfoods unter anderem mit Konsumismus, hektischem Leben, schlechter Qualit\u00e4t und \u201eBilligware\u201c verbunden ist, dann ist <strong>der hausgemachte Slowburger<\/strong> derjenige, der mit hochwertigen Zutaten zubereitet wird. F\u00fcr mich ist er eine Art <em>Comfort Food<\/em>: das, was man nach einem miesen Tag in Ruhe isst, unkompliziert, das einem Zufriedenheit und Genuss schenkt, mit dem man sich mit der Welt vers\u00f6hnt (oder es zumindest versucht). Und die Zubereitungszeit entspricht der eines einfachen Nudelgerichts mit Tomatenso\u00dfe.<\/p>\n<p>Die besten Burger-Zutaten sind 5:<\/p>\n<ol>\n<li><strong>Patties<\/strong> mit Qualit\u00e4tsrinderhackfleisch (am besten grob gewolft)<\/li>\n<li><strong>So\u00dfe<\/strong>: Mayonnaise, Ketchup, Dijon-Senf<\/li>\n<li><strong>Br\u00f6tchen<\/strong>: frische Burger Buns<\/li>\n<li><strong>K\u00e4se<\/strong>: ger\u00e4ucherter <a href=\"https:\/\/de.wikipedia.org\/wiki\/Scamorza\">Scamorza-K\u00e4se<\/a><\/li>\n<li><strong>Gem\u00fcse<\/strong>: Radicchio oder Kopfsalat<\/li>\n<\/ol>\n<p>Den Unterschied machen die <strong>Grundzutaten<\/strong>. Im Ausland habe ich Restaurants gesehen, die sich auf Hamburger spezialisiert haben, also nichts anderes als Sandwiches, aber wenig \u201eFast\u201c und sehr \u201eSlow\u201c. Das sind Restaurants, in denen man dir das Sandwich nicht f\u00fcr 1 Euro hinterherwirft, sondern wo man daf\u00fcr ordentlich bezahlen muss. Oft werden die Saucen, die bei jeder Art von Hamburger unverzichtbar sind, vom Koch selbst zubereitet. Ich habe mir einige Zutaten durchgelesen: erlesenes Fleisch von irgendeiner besonderen Rinderrasse, Hummer, ausgefallener K\u00e4se usw.<\/p>\n<p>In den letzten Jahren sind Restaurants entstanden, die sich auf Gourmet-Burger spezialisiert haben, \u00e4hnlich wie bei den Pizzen, die ebenfalls wieder \u201eGourmet\u201c sind (aber was hat dieses Wort \u201eGourmet\u201c nur so Anziehendes?). Ich habe einige davon probiert: Burger mit oft interessanten Geschmackskombinationen, die (fast) alle vom Restaurant selbst zubereitet werden, vom Br\u00f6tchen bis zu den Saucen. Wenn ich ein Gourmet-Burger-Restaurant er\u00f6ffnen w\u00fcrde, w\u00e4re das etwas anderes.<\/p>\n<p>Mit der <strong>Zubereitung von hausgemachten Burgern<\/strong> habe ich erst nach ein paar Jahren in Deutschland angefangen, als ich eine Art Abneigung nicht nur gegen die Gerichte der Uni-Mensa, sondern auch gegen die Menge an Fertiggerichten und Halbfertiggerichten entwickelte, die ich jede Woche im Supermarkt sah. Der H\u00f6hepunkt kam eines Abends, als ich einen vorgefertigten Hamburger aus der K\u00fchltheke probieren musste. Durch eine Reihe sprachlicher Vereinfachungen (Hamburger Bulette \u2013 Hamburger \u2013 Burger) sind wir zu dem Hamburger gekommen, den wir heute kennen.<\/p>\n<p>Das ist der Hamburger, den ich zu Hause am h\u00e4ufigsten zubereite. Den Unterschied macht vor allem das Br\u00f6tchen: Wenn ihr k\u00f6nnt, vermeidet die superweichen und fast unverw\u00fcstlichen Br\u00f6tchen, die man neben den Crackern findet, und nehmt lieber welche aus der B\u00e4ckerei (die erkennt man an der \u201eMaserung\u201c der Krume, also an den unregelm\u00e4\u00dfigen L\u00f6chern) \u2026 du wirdst den Unterschied schmecken!<\/p>\n<p>Dann gibt es die Die Auswahl des Fleisches: Angesichts meines Wohnorts und der Qualit\u00e4t des Fleisches, das man in der Toskana kaufen kann, scheint mir das Chianina-Rindfleisch absolut das beste zu sein.
