Das Rezept f\u00fcr den Bonito in Oliven\u00f6l ist ganz einfach. Dieser Fisch\u00a0ist im toskanischen Meer zuhause. Vom sp\u00e4ten Fr\u00fchjahr bis zum Sommeranfang ist die Fischsaison im toskanischen Archipel (in den Provinzen Grosseto und Livorno). Der Bonito geh\u00f6rt zur Familie der Thunfische und Makrelen, und wie diese ist er <strong>ein hochwertiger Fisch mit hohen N\u00e4hrwerten<\/strong>. Er kann bis zu 10 kg schwer werden. Der Bonito, den ich gekauft habe, war mit seinen 2,5 kg eher ein kleines Exemplar! Wie Thunfisch und Makrele, ist er ein Fettfisch, reich an gesunden Omega-3-Fetts\u00e4uren. Sein Fleisch ist dunkelrot und reich an Geschmack. In San Vincenzo (bei Livorno) findet jedes Jahr das Palamita-Festival statt. Gerade in dieser Zeit findet man den Bonito ganz frisch auf dem Markt, z.B. auf dem bunten und sch\u00f6nen zentralen Markt in Livorno.<br \/> Der Bonito ist ein <em>presidio<\/em> von <strong>Slow Food Toskana<\/strong>. Er ist aber auch sehr schmackhaft mit frischen Kr\u00e4uter in der Pfanne gebraten oder gegrillt.<br \/> Als Konserve in Oliven\u00f6l hat er einen feinen Geschmack, \u00e4hnlich dem Thunfisch und nicht so kr\u00e4ftig wie die Makrele. F\u00fcr das Rezept habe ich ein bisschen geforscht. Ich habe v.a. die Ratschl\u00e4ge des Kochs aus meinem <a href=\"https:\/\/www.tripadvisor.it\/Restaurant_Review-g194711-d1536052-Reviews-Ristorante_Summertime-Capoliveri_Elba_Island_Province_of_Livorno_Tuscany.html\" target=\"_blank\" rel=\"noopener\">Lieblingsrestaurant auf Elba<\/a> befolgt.
