Das hatte ich, als ich zum ersten Mal ein Souffl\u00e9 gebacken habe. Denn eine der gel\u00e4ufige Szene in der K\u00fcche ist, ein Souffl\u00e9 aus dem Backofen zu holen und es langsam zusammenfallen zu sehen. Das wird hier nicht den Fall sein! Mit diesem Rezept kann man gelingsicher ein leckeres Souffl\u00e9 zubereiten. Die Hauptzutaten eines echten Souffl\u00e9s sind Eier, Sahne und, in diesem Fall, ein geschmackvoller Schafk\u00e4se wie der Pecorino Toscano.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Welche_Zutat_laesst_ein_Souffle_aufgehen\"><\/span>Welche Zutat l\u00e4sst ein Souffl\u00e9 aufgehen?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Die wichtigste Zutat, die ein Souffl\u00e9 aufgehen l\u00e4sst, ist die Luft, die wir in die Masse einarbeiten. Diese besteht in der Regel aus Eiern (die sowohl dazu dienen, das Souffl\u00e9 zusammenzuhalten als auch Luft einzubauen) und Sahne. Vor allem die Sahne dient dazu, das Souffl\u00e9 aufgehen zu lassen: Man denke nur an Schlagsahne. In einem authentischen Souffl\u00e9 gibt es also keine Hefe, sondern nur Zutaten, denen mit einem elektrischen Schneebesen Luft untergemischt wird.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Wie_faellt_ein_Souffle_nicht_zusammen\"><\/span>Wie f\u00e4llt ein Souffl\u00e9 nicht zusammen?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Das ist wirklich eine Kunst! Mit ein wenig Erfahrung und mit diesen Tipps wird das Souffl\u00e9 nicht zusammenfallen. Bei der Zubereitung eines Souffl\u00e9s gibt es drei Dinge zu beachten:<\/p>\n<ul>\n<li>Die Zutaten m\u00fcssen gut verarbeiten werden, damit sie sch\u00f6n aufgehen<\/li>\n<li>Das Souffl\u00e9 bei der richtigen Temperatur gebacken werden.<\/li>\n<li>Au\u00dferdem darf man es nicht abk\u00fchlen lassen, also die Temperatur zu schnell senken.<\/li>\n<\/ul>\n<\/div>\n<h3><span class=\"ez-toc-section\" id=\"Die_Zutat_der_toskanische_Schafskaese\"><\/span>Die Zutat: der toskanische Schafsk\u00e4se<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Der toskanische Schafsk\u00e4se g.U. (<em>Pecorino toscano DOP<\/em>) wurde zu Recht mit einem G\u00fctezeichen ausgezeichnet. Sein urspr\u00fcnglicher Name war &#8222;<strong>Marzolino<\/strong>&#8220; (aus &#8222;Marzo&#8220; = M\u00e4rz), d.h. ein K\u00e4se, der im M\u00e4rz hergestellt wurde. Die ersten Erw\u00e4hnungen des <em>pecorino toscano<\/em> sind aus dem\u00a015. Jahrhundert. Sie erz\u00e4hlen, dass erst die Etrusker, sp\u00e4ter deren Nachfolger, die R\u00f6mer, etwas \u00e4hnliches hergestellt haben sollen.<\/p>\n<p>Es sind <strong>die Etrusker<\/strong>, die mit der Herstellung von Milchprodukte angefangen haben. Die Etrusker haben die eigene Ern\u00e4hrung durch Milchprodukte bereichert. Von ihnen, deren Werke\u00a0in der Toskana v.a. in <strong>Volterra<\/strong> (<i>Velahtri<\/i> in der etruskischen Sprache) und im Guarnacci-Museum zu bewundern sind, haben die R\u00f6mer vieles \u00fcbernommen, wie \u00a0z.B. die Herstellung von Milchprodukten sowie die Grundkenntnisse ihrer Medizin. Hier findet Ihr einige Kennzeichen des <em>pecorino<\/em>. Einen Einblick in die K\u00e4seherstellung findet Iht <a href=\"https:\/\/www.pecorinotoscanodop.it\/de\/pecorino-toscano-g-u\/\" target=\"_blank\" rel=\"nofollow noopener\">hier<\/a>.<\/p>\n<ul>\n<li><strong>Milch<\/strong>. Der toskanische Schafsk\u00e4se ggA wird aus frischer oder gereifter Milch hergestellt.\u00a0Die Milch f\u00fcr die K\u00e4se-Herstellung soll\u00a0nur von Schafen aus der Toskana kommen. Es gibt unterschiedliche\u00a0Schafsrassen, was zum Geschmack und Duft des Schafsk\u00e4ses beitr\u00e4gt.<\/li>\n<li><strong>Konsistenz<\/strong>. Er kann weich, halb-fest oder hart sein.\u00a0Die Klassifizierung des K\u00e4ses nach seiner Festigkeit enspricht der Wassermenge, die der K\u00e4se noch enth\u00e4lt, z.B. 45-60% Wasser in Weichk\u00e4sen (wie Stracchino, Quark, Ricotta usw.), max. 40% in Hartk\u00e4sen (Schafsk\u00e4sen, Parmigiano usw.).<\/li>\n<li><strong>Geschmack und Duft<\/strong>. Ein junger toskanischer Weich-Schafsk\u00e4se wird nicht nur eine weichere Konsistenz haben, sondern auch einen delikateren Geschmack bzw. Duft besitzen. Er ist also zum Feinreiben nicht geeignet (also nicht f\u00fcr ein Gericht wie den Schafsk\u00e4se-Souffl\u00e9).
