Das Rezept ist <strong>vegetarisch<\/strong>, wie viele andere toskanische Gerichte. Die Zutaten sind \u00e4hnlich, wie die von der <em>Panzanella<\/em>, dem toskanischen Brotsalat. Fast alles, was noch verwendbar war, wurde gebraucht. Der Hunger war allt\u00e4glich und ein kostbares Gut wie Brot warf man nicht einfach weg. Brot wurde einmal in der Woche gebacken. Was \u00fcbrig blieb, wurde f\u00fcr Suppen (z.B. die <em>Ribollita<\/em>, eine Suppe aus Siena), die <a href=\"https:\/\/theblackfig.com\/2013\/07\/la-panzanella-toscana-parte-i-le-ricette-estive-toscane-col-pane.html\"><em>Panzanella<\/em><\/a> oder eben die toskanische Tomaten-Brotsuppe verwendet. Dazu kam, was im Gem\u00fcsegarten wuchs. Im Fall der toskanischen Tomaten-Brotsuppe waren es reife Tomaten, aromatisches Basilikum, Zwiebel und Oliven\u00f6l. Tomaten und Oliven\u00f6l sind die Aromen des Sommers.<\/p>\n<h3 style=\"clear: both; text-align: justify;\"><span class=\"ez-toc-section\" id=\"Toskanische_Tomaten-Brotsuppe\"><\/span>Toskanische Tomaten-Brotsuppe<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p style=\"clear: both; text-align: justify;\">Wie alt soll das Brot sein? Eine wichtige Frage, um die toskanische Tomaten-Brotsuppe zuzubereiten. Meistens benutze ich toskanisches Brot, das 4 bis 6 Tage alt ist.<\/p>\n<p style=\"clear: both; text-align: justify;\">Das toskanische Brot, das seit diesem April ein DOP Produkt geworden ist, wird im Holzhofen ohne Salz gebacken. Stattdessen gibt es Varianten, die v.a. das <em>soffritto<\/em> betreffen. Der <em>soffritto<\/em> ist eine der <strong>Grundsteine der italienischen K\u00fcche<\/strong> und der Anfang vieler Rezepte, vom Risotto zum <em>arrosto<\/em> (Braten) oder Rag\u00f9. Es handelt sich um fein geschnittenes Gem\u00fcse, meistens Zwiebel, Knoblauch, M\u00f6hren und Sellerie. Manche verwenden nur Zwiebeln oder lassen den Sellerie weg.<\/p>\n<p>Die Tomaten sollten frisch und reif sein. Man kann auch eine gekaufte Tomatenso\u00dfe benutzen, dennoch wird der Geschmack dieses Sommergerichts nicht derselbe sein. Unverzichtlich f\u00fcr die <em>Pappa col pomodoro<\/em> ist hochqualitatives Oliven\u00f6l, das das Gericht vervollst\u00e4ndigt.<\/p>\n<div style=\"clear: both; text-align: center;\"><img
