Die ersten Nachrichten \u00fcber <em>Pecorino<\/em> gehen auf das<strong> 15. Jahrhundert zur\u00fcck<\/strong>. Sein urspr\u00fcnglicher Name war &#8222;Marzolino&#8220;, d.h. ein K\u00e4se, der im M\u00e4rz hergestellt wurde. Erst die Etrusker haben man mit der\u00a0Herstellung von Milchprodukten begonnen. Mit der Zeit verbesserte sich die Herstellungsmethode: Heute ist der toskanische <em>Pecorino<\/em> eine verbreitete Spezialit\u00e4t der Region, die die Toskaner sowie Feinschmecker aus der ganzen Welt im Urlaub auf einem Teller toskanischer <em>Antipasti<\/em> (Vorspeisen) genie\u00dfen k\u00f6nnen.<\/p>\n<p style=\"text-align: justify;\">Naturbelassene Rohmilch ist nat\u00fcrlich das Ausgangsprodukt f\u00fcr die <strong>Herstellung des <\/strong><em><strong>Pecorino toscano DOP<\/strong>\u00a0<\/em>(DOP = g.g.A. &#8222;gesch\u00fctzte geographische Angabe&#8220;). K\u00e4se wird normalerweise nach seiner Reifezeit beurteilt. Wir k\u00f6nnen zwischen einem Extraharten- Halbeharten- und Weichhartschafsk\u00e4se bzw.\u00a0<em>Pecorino toscano DOP<\/em> w\u00e4hlen. Die Dauer\u00a0des Reifeprozesses ist entscheidend f\u00fcr seinen Geschmack: je h\u00e4rter der Pecorino, desto pikanter sein Geschmack und intensiver sein Duft.<\/p>\n<p style=\"text-align: justify;\">Die Herstellung des <em>Pecorino toscano DOP<\/em> wird von einem Konsortium reglementiert.
