Die Zubereitung braucht v.a. Zeit und etwas Geschick. <strong>Die Belohnung ist aber gro\u00df<\/strong>: Erstens ist der Zuccotto wundersch\u00f6n anzusehen, zweitens ist ein St\u00fcck Zuccotto eine Explosion f\u00fcr die Geschmacksknospen. Eigentlich ist der Zuccotto in der Konditorsprache keine klassische Torte, sondern ein <strong>Halbgefrorenes<\/strong> (ein <em>semifreddo<\/em>). Ich habe im Internet einige deutsche Bezeichnungen f\u00fcr den Zuccotto wie &#8222;Eisbombe&#8220; oder &#8222;Kuppeltorte&#8220; gefunden. Der Name &#8222;Zuccotto&#8220; kommt eigentlich von <em>zucca<\/em>, K\u00fcrbis auf Deutsch, und spielt auf die Form dieser Torte an.<\/p>\n<p style=\"text-align: justify;\">Der Zuccotto ist in der <strong>Renaissance<\/strong> erfunden worden. Die Renaissance war die goldene Zeit der Stadt Florenz, die von der Medici-Familie regiert wurde. Die m\u00e4chtigen Medici liebten Bankette, Festmahle, die von \u00fcppigem Essen und Trinken gekennzeichnet waren. Ein Bankett musste etwas Sensationelles zu bieten haben. Ein Beispiel: das <strong>Gelato (Eis)<\/strong>, dessen Zubereitung und Verzierung damals keine Selbstverst\u00e4ndlichkeit war. Daraus entstand der Zuccotto, dessen Form an die Form eines Pr\u00e4laten-Huts erinnern sollte. Der <strong>Safran<\/strong> wurde auch als &#8222;rotes Gold&#8220; bezeichnet. So selten und kostbar, wurde er in der Vergangenheit beim Handeln anstatt des Geldes benutzt. Der Grund seiner Kostbarkeit? Der Safran besteht aus den\u00a03 Griffeln (im getrockneten Zustand: F\u00e4den) einer sch\u00f6nen Blume, des\u00a0<em>crocus sativo<\/em>. F\u00fcr 1 Kg Safran braucht man etwa 150000 Blumen! Au\u00dferdem erntet man den Safran fast ausschlie\u00dflich manuell.<\/p>\n<p style=\"text-align: justify;\">Seit langer Zeit w\u00e4chst dieses noble Gew\u00fcrz auch in Italien: in den Abruzzen, in Sardinien und in Toskana. Im 13. Jahrhundert wurde der Safran in <strong>San Gimignano<\/strong> zusammen mit Geld benutzt, um die Stadtschulden zu bezahlen.<br \/>\nDer echte Safran kommt also in Form von F\u00e4den und ist teuer. Rotes oder goldenes Pulver bzw. billige F\u00e4den sind kein Safran, sondern enthalten allenfalls ein wenig davon. Oft sieht man rotfarbige Zuccotti: Das ist der Alchermes, ein Lik\u00f6r, der gern wegen seiner Farbe in der Konditorei benutzt wird. Ich mag und verwende ihn nicht.<\/p>\n<p style=\"text-align: justify;\">Meine pers\u00f6nliche Anpassung des Rezepts betrifft fast ausschlie\u00dflich die Verwendung von Safran. Ich wollte die Gelegenheit nutzen und Euch ein hochwertiges, toskanisches Produkt zeigen. Die <strong>Hauptzutaten des Zuccotto mit Safran<\/strong> sind vier: Biskuit (genannt &#8222;pan di Spagna&#8220;), Sahne, zartbittere Schokolade und Safran. Die zartbittere Schokolade passt wunderbar zum Geschmack des Safrans.<\/p>\n<h4>Das Biskuit oder <em>Pan di Spagna<\/em> (&#8222;spanisches Brot&#8220;)<\/h4>\n<p style=\"text-align: justify;\"><span class=\"st\">Klar, ein fertiges Biskuit zu kaufen ist schnell und einfach, der Geschmack leidet aber. Wenn Du also ein echtes Zuccotto probieren m\u00f6chtest, lies bitte weiter!<br \/>\nWichtig ist, <strong>ein gutes Biskuit zuzubereiten<\/strong>. Das tr\u00e4gt\u00a0auf Italienisch den Namen <em>Pan di Spagna<\/em>, also &#8222;spanisches Brot&#8220;. Im\u00a0Biskuit kommt keine Hefe vor. Die Luft wird durch das Schaumig-schlagen vieler Eier zugef\u00fchrt. Zum Gl\u00fcck gibt es heute K\u00fcchenmaschinen bzw. Handr\u00fchrger\u00e4te! <\/span><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-2971\" src=\"http:\/\/theblackfig.com\/wp-content\/uploads\/2014\/03\/comefarelozuccotto-e1466609546680.jpg\" alt=\"zuccotto vorbereitung\" width=\"1200\" height=\"900\" srcset=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2014\/03\/comefarelozuccotto-e1466609546680.jpg 920w, https:\/\/theblackfig.com\/wp-content\/uploads\/2014\/03\/comefarelozuccotto-e1466609546680-300x225.jpg 300w, https:\/\/theblackfig.com\/wp-content\/uploads\/2014\/03\/comefarelozuccotto-e1466609546680-500x375.jpg 500w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<p>Es gibt drei Dinge, die man bei der <strong>Zubereitung des Biskuits<\/strong> beachten sollte:<\/p>\n<ul>\n<li style=\"text-align: justify;\"><span class=\"st\">Die Eier sollten Raumtemperatur haben;<\/span><\/li>\n<li style=\"text-align: justify;\">Eier und Zucker sollten lange und mit Geduld aufgeschlagen werden, bis sich steife Flocken formen. Die Masse soll locker und volumin\u00f6s werden.<\/li>\n<li style=\"text-align: justify;\">Mehl und Butter vorsichtig mit einer K\u00fcchenspachtel dazu geben, mit einer Bewegung von oben nach unten, sodass die Masse locker bleibt.<\/li>\n<\/ul>\n<p>Hier zeige ich euch die Schritte, um aus dem Biskuit die &#8222;Kuppel&#8220; des Zuccotto zu formen.
