Ohne Gelatine, Eier und zus\u00e4tzlichen Zucker ist dieser cremige K\u00e4sekuchen ein Genuss f\u00fcr Schokoladen-Liebhaber. Die Zutaten sind wenige: Ricotta, Schokolade, Kakao und Cantuccini. Wenige, denke ich, denn die <strong>&#8222;Cantucci&#8220; oder &#8222;Cantuccini&#8220;<\/strong> sind der typische toskanische Zwieback bzw. <em>biscotti<\/em>. Sie sind ein Mandelgeb\u00e4ck aus <strong>Prato<\/strong>. In dieser Stadt ist <a href=\"http:\/\/www.antoniomattei.it\/prodotti\/linea-prodotti-mattei\/biscotti-di-prato\" target=\"_blank\" rel=\"noopener noreferrer\">Mattei<\/a> der ber\u00fchmteste traditionelle Konditor f\u00fcr Cantuccini.<br \/> In anderen Regionen Italiens findet man \u00e4hnliche <strong>Zwiebacksorten<\/strong> mit Haseln\u00fcssen oder Schokolade. Die echten Cantuccini werden dennoch ausschlie\u00dflich mit Mandeln zubereitet.<\/p>\n<h3 style=\"text-align: justify;\"><span class=\"ez-toc-section\" id=\"Wie_werden_die_Cantuccini_zubereitet\"><\/span>Wie werden die Cantuccini zubereitet?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p style=\"text-align: justify;\">Das Rezept ist ziemlich einfach. Die <strong>Zutaten<\/strong> der Cantuccini sind v.a. Eier und Mandeln. Dabei wird keine Hefe verwendet. Zun\u00e4chst werden l\u00e4ngliche Laibe aus dem Teig geformt. Diese werden gebacken, dann sofort der Breite nach geschnitten. So entstehen die Cantuccini, die nun nochmal f\u00fcr einige Minuten gebacken werden.<\/p>\n<p style=\"text-align: justify;\">Dank ihres doppelten Backens, kann man die Cantuccini lange aufbewahren. Sie sind eher harte Kekse, deswegen tunken wir sie gern in den toskanischen S\u00fc\u00dfwein <strong>Vin Santo<\/strong>: ein typisches toskanisches Dessert.<\/p>\n<p style=\"text-align:
