Die Lasagne wird oft auch f\u00fcr besondere Anl\u00e4sse gekocht, sei es zum Abendessen mit Freunden oder als <strong>Sonntagsessen<\/strong>, was \u00fcbrigens in Italien f\u00fcr die Familien immer noch sehr wichtig ist. Die klassische Lasagne ist die mit <em>rag\u00f9<\/em>, oder Bolognese, wie man diese Sauce in Deutschland nennt. Es gibt dennoch wirklich viele andere M\u00f6glichkeiten f\u00fcr Lasagne: vegetarisch, wie Pesto- oder Gem\u00fcse Lasagne, die k\u00f6stliche Fischlasagne, Lasagne mit Pilzen und Speck usw. Die meisten <strong>Lasagne-Gerichte<\/strong> haben dennoch etwas, das keinesfalls fehlen darf: die Bechamelsauce.<\/p>\n<p style=\"text-align: justify;\">Noch ein paar Worte zu den zwei wichtigsten Zutaten der K\u00fcrbis-Lauch Lasagne mit Gorgonzola und Waln\u00fcssen: dem Gorgonzola und der Bechamelsauce.<\/p>\n<h3 style=\"text-align: justify;\"><span class=\"ez-toc-section\" id=\"Die_besondere_Zutat_in_Kuerbis-Lauch_Lasagne_der_Gorgonzola_gU\"><\/span>Die besondere Zutat in\u00a0K\u00fcrbis-Lauch Lasagne: der Gorgonzola g.U.<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p style=\"text-align: justify;\">Den italienischen Gorgonzola aus der Lombardei kann man vereinfachend als Schimmelk\u00e4se bezeichnen. Der Gorgonzola ist ein <strong>Blauschimmelk\u00e4se<\/strong> (wie der franz\u00f6sische Roquefort) und ein <strong>Weichk\u00e4se<\/strong> (wie Stracchino, Taleggio usw.). Der Name kommt aus einem Dorf in der N\u00e4he von Mailand, Gorgonzola, wo der K\u00e4se urspr\u00fcnglich hergestellt wurde. Heute wird er nicht nur in bestimmten Gegend der Lombardei, sondern auch des Piemonts hergestellt.<\/p>\n<p style=\"text-align: justify;\">Er wird nur aus roher Vollmilch aus kontrollierter Produktion hergestellt. Die Herstellung von Gorgonzola, der das Siegel gesch\u00fctzter geografischer Herkunft (gU) tr\u00e4gt, muss vielen Regeln entsprechen, wie die Herkunft der verwendeten Milch, die Reifedauer, die Gr\u00f6\u00dfe und die Form des K\u00e4selaibes sowie die Herstellungsschritte und einiges mehr.<\/p>\n<p style=\"text-align: justify;\">Es gibt <strong>zwei Sorten von Gorgonzola<\/strong>: s\u00fc\u00df und pikant. Der s\u00fc\u00dfe Gorgonzola ist cremiger (Reifedauer min. 5o Tage), der pikante Gorgonzola hat eine festere und k\u00f6rnige Konsistenz. Ich wei\u00df es nicht genau. Man findet widerspr\u00fcchliche Angaben \u00fcber die &#8222;Nationalit\u00e4t&#8220; der Bechamelsauce. <strong>Caterina de&#8216; Medici<\/strong>, die Frau vom franz\u00f6sischen K\u00f6nig Heinrich II, soll die Bechamelsauce in Frankreich eingef\u00fchrt haben. Sp\u00e4ter wurde das Rezept von <strong>Louis de B\u00e9chamel<\/strong> perfektioniert.<\/p>\n<p style=\"text-align: justify;\">In der Toskana, von der Medici-Familie beherrscht, hie\u00df die Bechamelsauce &#8222;<em>salsa colla<\/em>&#8222;, d.h. &#8222;Klebsauce&#8220;. Caterina gefiel die K\u00fcche des franz\u00f6sischen Hofes nicht, also f\u00fchrte sie einige Rezepte aus ihrer Herkunftsregion ein. Sie bestellte sogar toskanische K\u00f6che nach Frankreich, die einen wichtigen Einfluss auf die franz\u00f6sische K\u00fcche gehabt haben sollen. Mein Ged\u00e4chtnis ist nicht so gut, deswegen wurde die Bechamel mal zu fl\u00fcssig oder zu dick. Das Bechamel-Rezept, das ich nun benutze, habe ich aus einem dicken Buch \u00fcber die klassische, franz\u00f6sische K\u00fcche: <em>F<\/em><i>undamental Techniques of Classic Cuisine <\/i>(genauere Angabe \u00fcber das Buch findest du in <a href=\"https:\/\/theblackfig.com\/de\/bucher-uber-essen-und-trinken\">B\u00fccher \u00fcber Essen und Trinken<\/a>). Im Rezept kommen Begriffe auf Franz\u00f6sisch wie <i>tamponner<\/i>, <i>singer<\/i> o <i>dessech\u00e9r <\/i>vor. Der Wichtigste ist aber die <em>Roux<\/em>. Die<strong> <em>Roux<\/em><\/strong>, eine Mischung aus Butter und Mehl, ist die Grundlage der Bechamelsauce. Die Bechamel ist eine wei\u00dfe Sauce, die auch als Basis f\u00fcr andere, komplexere Saucen verwendet wird.<\/p>\n<p style=\"text-align: justify;\">Nun weisst du schon eine Menge \u00fcber die Bechamelsauce!
