Der Scamorza ist ein Kuhmilchk\u00e4se, genau wie die <em>Mozzarella<\/em> oder das <em>Provolone<\/em>. Alle solche K\u00e4sesorten werden nach einem bestimmten Herstellungsverfahren gemacht, wo die\u00a0Bruchmasse ges\u00e4uert, abgetropft und dann zu langen F\u00e4den, oft noch manuell, ausgezogen wird. Deshalb werden jene K\u00e4se \u00a0<em>formaggi a pasta filata <\/em>genannt,<em>\u00a0<\/em>n\u00e4mlich &#8222;K\u00e4se mit gesponnem Teig&#8220;. Natives Oliven\u00f6l und Essig mit etwas Salz d\u00fcrfen an Salaten nicht fehlen. Sehr beliebt und zurecht weltweit bekannt ist der <strong>Balsamico-Essig aus Modena<\/strong>. Er wird auch in Emilia-Romagna hergestellt, eine der kulinarisch interessantesten Regionen Italiens. Der Balsamico-Essig ist ein typisches Produkt und seit Jahren steht er unterm dem <strong>G\u00fctezeichen IGP (ggA)<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Leider hat der &#8222;Balsamico-Essig&#8220;, den man im Supermarkt findet, wenig mit dem Balsamico-Essig aus Modena zu tun. Das Herstellungsverfahren des Balsamico ist lang. Z.B. soll der Balsamico mindestens 60 Tage reifen. Es ist keine Vinaigrette oder &#8222;Balsamico-Creme&#8220;: es ist ein traditionsreiches Qualit\u00e4tsprodukt, dessen Herstellungsverfahren von der EU-Kommission reglementiert wurde. Die Nachahmungen sind vielf\u00e4ltig. Den <strong>industriellen Balsamico-Essig<\/strong> findet man in zu gro\u00dfen Flaschen f\u00fcr wenige Euro: leider haben diese Produkte mit dem Balsamico-Essig aus Modena kaum etwas gemeinsam.<\/p>\n<p style=\"text-align: justify;\">M\u00f6chtest Du den Balsamico-Essig aus Modena n\u00e4her kennenlernen? Dann lies <a href=\"http:\/\/www.acetobalsamico.de\/Balsamico-Informationen.html\" target=\"_blank\" rel=\"noopener\">hier<\/a>.<\/p>\n<p style=\"text-align: justify;\"><strong>Wie kann man den echten Balsamico-Essig erkennen?<\/strong><\/p>\n<p style=\"text-align: justify;\">Meine Grundregeln sind die folgenden:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Auf den Preis schauen. Der Balsamico-Essig aus Modena ist nicht billig. Nach seinem Herstellungsverfahren kann man Balsamico Essig von 12 oder 25 Jahren kaufen. Wie kann er also nur 2-3 Euro kosten?<\/li>\n<li style=\"text-align: justify;\">Auf die Flasche schauen: gro\u00dfe Flaschen sind verd\u00e4chtig. Den Balsamico-Essig, da er kein billiges Produkt ist, findet man meistens in kleinen Glas-Flaschen.<\/li>\n<li style=\"text-align: justify;\">Auf das Etikett schauen. Der Balsamico-Essig ist ein Weinessig. Zus\u00e4tze wie Farbstoffe, Zuckerr\u00fcbe oder Zuckerrohr geh\u00f6ren nicht zum Balsamico aus Modena.
