Jedenfalls hoffe ich, mit diesem Post euer Interesse f\u00fcr die <em>Cecina<\/em> zu wecken. Vielleicht probiert ihr sie n\u00e4chstes Mal: Es lohnt sich!<br \/>\nDie <em>Cecina<\/em>, <strong>das toskanische Street-Food<\/strong>, soll nicht mit der gleichnamigen toskanischen Stadt C\u00e9cina verwechselt werden. Also passt Pfannkuchen nicht ganz, obwohl die <em>Cecina<\/em> dem Aussehen und der Konsistenz nach an einen Pfannkuchen erinnert.<br \/>\nIm Internet habe ich oft gelesen, dass die <em>Cecina<\/em> als &#8222;Pizza&#8220; bezeichnet wird. Das ist nicht nur unpassend, sondern falsch. Pizza und <em>Cecina<\/em> haben nur den Backofen gemeinsam.<\/p>\n<p style=\"text-align: justify;\">Vielleicht kann man die <em>Cecina<\/em> als deftigen Kuchen bezeichnen. Als Streetfood ist sie ein einfaches Gericht, das aus wenigen Zutaten zubereitet wird: Wasser, <strong>Kichererbsenmehl<\/strong>, Salz, Oliven\u00f6l. Die Cecina wird in den meisten Pizzerien serviert: sie soll hei\u00df sein und frisch aus dem Backofen kommen.<br \/>\nEntscheidend ist die Konsistenz der Cecina, was in den Augen der Toskaner das Qualit\u00e4tskriterium f\u00fcr eine Pizzeria darstellt. In jeder Stadt debattieren die Bewohner, <strong>welche die beste Pizzeria f\u00fcr die Cecina sei<\/strong>.<\/p>\n<h3 style=\"text-align: justify;\"><span class=\"ez-toc-section\" id=\"Wie_man_die_Cecina_zuhause_zubereiten_kann\"><\/span>Wie man die Cecina zuhause zubereiten kann<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p style=\"text-align: justify;\">Die Cecina wird klassisch im Holzofen gebacken. Pers\u00f6nlich finde ich sie am besten, wenn sie innen weich ist und au\u00dfen eine d\u00fcnne Kruste hat. Zuhause kann man die Cecina im normalen Ofen bei der h\u00f6chsten Temperatur (250\u00b0) backen. In Pisa und Lucca nennt man sie eben &#8222;<em>cecina<\/em>&#8222;.
