Die meisten davon sind vegetarisch, wie auch die toskanische Polenta-Suppe mit Schwarzkohl, genannt &#8222;<em>bordatino<\/em>&#8222;. Diese Polenta-Suppe mit Schwarzkohl (einer typischen Kohlsorte aus der Toskana, auch <a href=\"https:\/\/de.wikipedia.org\/wiki\/Palmkohl\" target=\"_blank\" rel=\"noopener\">Palmkohl<\/a> genannt) ist eine typische Suppe aus Pisa. Ein anderes Gericht aus dieser Stadt ist z.B. <a href=\"https:\/\/theblackfig.com\/2013\/11\/le-seppie-con-le-bietole-uno-dei-piatti-di-pesce-della-cucina-toscana-ed-il-numero-cento.html\">Tintenfisch mit Mangold<\/a>. Die Polenta-Suppe kommt aus der <strong>armen K\u00fcche<\/strong>, wie viele Gerichte aus der Toskana. Die Suppe wurde v.a. an Bord (&#8222;<em>bordo<\/em>&#8222;) von Fischer-Boote zubereitet, deshalb auch der Name dieser Suppe, &#8222;<em>bordatino<\/em>&#8222;. Man kann sie schnell und ohne besonderen Aufwand zubereiten.<br \/>\nEs gibt auch andere Varianten dieser Polenta-Suppe. Die originale Polenta-Suppe wird mit Schwarzkohl zubereitet. Dennoch kann man auch andere Kohlsorten wie z.B. Wirsingkohl verwenden.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Die_pisanische_Kueche\"><\/span>Die pisanische K\u00fcche<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>In Pisa findet man haupts\u00e4chlich typische Gerichte eher <a href=\"https:\/\/theblackfig.com\/toscana\">aus der Toskana<\/a> als aus der lokalen Rezepten. Ich bin in Pisa aufgewachen und meine M.A. an der Uni hier absolviert, so kenne ich dennoch einige Gerichte, die wirklich nur die Familien in Pisa kochen.<\/p>\n<p>Wenn man an Pisa denkt, fallen einem, neben dem <strong>Bordatino<\/strong>, auch die <em>Torta co&#8216; bischeri<\/em> aus Pontasserchio, einem kleinen Ort in der Provinz Pisa, und Tintenfisch mit Mangold ein. Dann hat Pisa nat\u00fcrlich ihre eigene Version von Suppen, Stockfisch-Rezepten usw. Aber keine davon hat sich, in die Vorstellung von Besucher, als typische Gerichte anderer toskanischer St\u00e4dte eingepr\u00e4gt, wie z.B. die <em>Ribollita<\/em> oder di <em>Ricciarelli<\/em> aus Siena.<\/p>\n<p>Bordatino ist sicherlich weniger ber\u00fchmt als die klassische <a href=\"https:\/\/theblackfig.com\/2024\/10\/la-zuppa-toscana-al-cavolo-nero-di-nonna-lida.html\">toskanische Brotsuppe<\/a>: Tats\u00e4chlich findet man sie nur selten auf der Speisekarte eines Restaurants, sogar in Pisa. V.a. f\u00fcr lokale Rezepte frage ich gerne verschiedene Leute (in der Regel Frauen ab 50 aufw\u00e4rts&#8230;) nach dem Gericht, von dem ich geh\u00f6rt habe und dessen Zubereitung ich gerne ausprobieren m\u00f6chte. Ich habe eine Vorliebe f\u00fcr Geschichten, die zum pers\u00f6nlichen Erlebtes geh\u00f6ren, die ich, neben dem Rezept, erz\u00e4hlen kann. So gewinn ein lokales Rezept an Geschmack! So ist es auch mit dem Bordatino geschehen.<\/p>\n<p>In diesem Rezept sind drei Elemente vereint: das m\u00fcndlich \u00fcberlieferte Rezept einer Pisaner Dame, ein Bericht \u00fcber Bordatino, der
