Die <a href=\"https:\/\/theblackfig.com\/de\/2024\/10\/toskanische-brotsuppe-mit-schwarzkohl-cannellini-bohnen.html\">toskanische Brotsuppe<\/a> ist ohne diese Kohlsorte nicht zu denken. Diese ist eine vegetarische, sehr nahrhafte Suppe und eher ein Wintergericht. Meine Oma meinte, dass der Schwarzkohl im Winter richtig kalte Tage \u00fcberstehen sollte. So w\u00fcrde er &#8222;weicher&#8220; werden und richtig gut schmecken. Deshalb soll er, obwohl auch im Fr\u00fchling und im Sommer zu sehen, besser im Winter schmecken.<\/p>\n<p>Hier ist der Schwarzkohl aus dem <strong>Gem\u00fcsegarten<\/strong>. Dieses Jahr sind eher kleine Bl\u00e4tter gewachsen. Kabeljau in Italien (aber nicht nur hier!) konserviert. Der getrocknete Kabeljau wird hier &#8222;Stockfisch&#8220; (<em>stoccafisso<\/em>) genannt, der gesalzene Kabeljau indessen wird <em>baccal\u00e0<\/em>\u00a0genannt.<\/p>\n<p>Die\u00a0deutsche Sprache hat zwei verschiedene Bezeichnungen f\u00fcr diese Konservierungsmethoden: F\u00fcr den getrockneten Fisch wird das Wort &#8222;Stockfisch&#8220; (<em>stoccafisso<\/em>) verwendet. F\u00fcr den gesalzenen und getrockneten Fisch wird das Wort &#8222;Klippfisch&#8220; (<em>baccal\u00e0<\/em>) verwendet. Ohne Wasser w\u00e4re der konservierte Fisch ungenie\u00dfbar. Im Fall des Stockfisches, wird der Fisch erst eingeweicht, bevor man ihn weiter zubereitet. Den Klippfisch l\u00e4sst man im frischen Wasser, das mehrmals gewechselt wird, so dass der Fisch entsalzen wird.
