Der Honig ist aber hier der Kapit\u00e4n: nicht wegen der Menge, sondern weil ich einen besonderen Honig f\u00fcr diesen Kuchen verwendet habe, der Honig aus der <em>Lunigiana<\/em>.<\/p>\n<h3>Der italienische Honig-Gew\u00fcrzkuchen<\/h3>\n<p>Dieser Kuchen erinnert mich an den <strong>deutschen Fruchtkuchen<\/strong>: sie riechen beide so gut und ihre Konsistenz ist auch \u00e4hlich. Das Rezept habe ich von <em><strong>nonna Onelia<\/strong><\/em>, der Mutter meiner Tante aus Turin. Vor einiger Zeit war ich zu Besuch und durfte einen Vormittag in ihrer K\u00fcche verbringen. Wir haben Mandelkekse und den Parrozzo gebacken und dann das Mittagessen gekocht. Ich konnte ihr Geschick bei den hundertfach wiederholten Handbewegungen des Knetens, Schneidens oder F\u00fcllens bewundern. Der Kuchen h\u00e4lt sich f\u00fcr einige Tage. Wenn er etwas trocken werden sollte, schmeckt er in Tee oder Kaffee getunkt trotzdem wunderbar.<\/p>\n<h3>Regionale Produkte&nbsp;der Toskana: der Honig aus der Lunigiana<\/h3>\n<p>Warst Du schon in der <strong>Lunigiana<\/strong>? Sie umfasst den n\u00f6rdlichen Teil der Toskana &nbsp;(die Provinz Massa-Carrara) und den s\u00fcdlichen Teil Liguriens (die Provinz La Spezia), wo sich auch die D\u00f6rfer der Cinque Terre befinden. Die Lunigiana hat ihren Namen von der Stadt Luna, einer altr\u00f6mischen Stadt, wo man heute noch r\u00f6mische Ruinen bewundern kann.<\/p>\n<p>Ich reise gern und immer mit einem Blick auf die <strong>Esskultur<\/strong> der Orte, die ich besuche. In der Lunigiana wird neben dem k\u00f6stlichen <em>Lardo di Colonnata IGP<\/em> (Speck aus Colonnata ggA) auch ein aromatischer Honig hergestellt. F\u00fcr seine Qualit\u00e4t hat der Honig aus der Lunigiana <a href=\"https:\/\/theblackfig.com\/territorio-in-ricette\">das G\u00fctezeichen &#8222;g.U.&#8220;<\/a> (DOP) bekommen.<\/p>\n<p>Es gibt zwei Sorten des Lunigiana-Honigs, mit unterschiedlichen Farben und Geschmack. Beide k\u00f6nnen nach Belieben in dem Rezept verwendet werden.<\/p>\n<ul>\n<li>Der <strong>Akazienhonig<\/strong> wird im Mai geerntet. Er hat eine sehr helle Farbe und riecht leicht nach Blumen und Vanille.<\/li>\n<li>Der <strong>Kastanienhonig<\/strong> wird zwischen Juni und Juli geerntet.
