Dort hatte ich zum Mittagessen <em>Pici <\/em>mit Salbeipesto, eine toskanische Pastasorte, die wie unregelm\u00e4\u00dfige, dickere Spaghetti aussieht.<\/p>\n<p data-start=\"659\" data-end=\"1189\">Nun hatte ich den Wunsch, ein <strong>Salbeipesto<\/strong> zuzubereiten, das ich dort sehr gemocht habe. Nach meiner Erfahrung sind<strong> Rosmarin, Salbei und Lorbeer<\/strong> die drei Kr\u00e4uter, die fast jeder in der Toskana im Garten hat. Sie kommen auch sehr oft in toskanische Gerichte auf.<\/p>\n<p data-start=\"659\" data-end=\"1189\">Die <strong>Hirse<\/strong>, die man mir geschenkt hat, stammt von einem biologischen Betrieb in der Provinz Pisa, <a href=\"https:\/\/www.aziendabiofloriddia.com\/\" target=\"_blank\" rel=\"noopener\">Floriddia<\/a>, dessen Pasta ich auch sehr sch\u00e4tze. Dieses Unternehmen produziert Pasta, H\u00fclsenfr\u00fcchte, Mehl und Getreidesorten wie Hirse \u2013 viele davon sind alte Sorten, die aus dem traditionellen Wissen wiederentdeckt wurden. Das Salbeipesto k\u00f6nnte man fast ein <strong>Winterpesto<\/strong> nennen, denn Salbei ist ein Kraut, das im Winter h\u00e4ufig in Suppen und Eint\u00f6pfen verwendet wird.<\/p>\n<h3 data-start=\"1191\" data-end=\"2045\">Ein winterlicher Salbeipesto zubereiten<\/h3>\n<p data-start=\"1191\" data-end=\"2045\">Die Hirsensuppe mit Salbeipesto hat mich an die <strong>ligurische Minestrone<\/strong> erinnert, die ich sehr mag\u2013 reich an vielen Gem\u00fcsesorten und zum Schluss verfeinert mit einem k\u00f6stlichen Basilikumpesto, dem typischen Sommerkraut. Salbei hingegen hat man das ganze Jahr \u00fcber zur Verf\u00fcgung, und bis jetzt habe ich ihn vor allem in Suppen, mit H\u00fclsenfr\u00fcchten, frittiert oder zum Aromatisieren von Fleisch und Fisch verwendet. Und tats\u00e4chlich: Er ist auch ein wunderbares, ungew\u00f6hnliches Pesto-Kraut!<\/p>\n<p data-start=\"2047\" data-end=\"2303\" data-is-last-node=\"\" data-is-only-node=\"\">Man kocht Hirse \u00e4hnlich wie Reis, sodass man damit neben Suppen und Salaten sogar S\u00fc\u00dfspeisen zubereiten kann. Das Salbeipesto verleiht der zarten Hirsemine\u00adstra ohne Zweifel einen kr\u00e4ftigeren Geschmack, der ausgesprochen gut dazu passt.<\/p>\n<div style=\"clear: both; text-align: center;\"><img
