Auch deswegen, weil der Amaranth keine klassische Zutat der <strong>italienischen K\u00fcche<\/strong> ist (und ich noch nie in Zentralamerika war). Woher kommt Amaranth? Ist Amaranth eine Getreidesorte?<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Woher_kommt_Amaranth\"><\/span>Woher kommt Amaranth?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Der Amaranth kommt aus Zentralamerika und wurde erst in den 70er Jahren von L\u00e4ndern wie USA, Indien und China neu entdeckt und angebaut. Dennoch habe ich in meinen Recherchen herausgefunden, dass man seit einigen Jahren auch in der <strong>Toskana<\/strong> Amaranth anzubauen versucht.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Ist_Amaranth_eine_Getreidesorte\"><\/span>Ist Amaranth eine Getreidesorte?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Nein, Amaranth ist eine Pflanze und ist glutenfrei. Man bezeichnet ihn auch als &#8222;Pseudogetreide&#8220;, denn er sieht aus und wird auch wie Getreide verwendet.<\/p>\n<p>Mit Amaranth wird auch einen anderer Begriff assoziiert, n\u00e4mlich &#8222;Superfood&#8220;. Ich mag den Begriff nicht. Er hat weniger mit Food als eher mit Foodmarketing zu tun. Der Begriff steht f\u00fcr die Mode, die Gesundheit und Wohlbefinden\u00a0mit vielen &#8222;Ohne&#8220; (ohne Butter, ohne Salz, ohne Gluten, ohne Zucker, ohne Fleisch usw.) verbindet, auch wenn man keine wirklichen Gesundheitsprobleme hat.<\/p>\n<p>Amaranth kann, zusammen mit Getreide (wie Dinkel oder Gerste) gegessen werden, um die eigene Ern\u00e4hrung abwechslungsreicher zu gestalten und sich mit einer anderen Zutat vertraut zu machen. Er ist in s\u00fc\u00dfen und herzhaften Rezepten zu finden. Es gibt auch Amaranth-Mehl, mit dem man backen kann. Die Amaranth-Kerne sind etwas Besonderes. Sie verleihen den Gerichten eine interessante Konsistenz und eine leichte nussige Note.<\/p>\n<p>Den italienischen Touch verdankt die\u00a0Amaranth-Suppe der Verbindung von K\u00fcrbis und geriebenem Parmesan.
