Es handelt sich um einen einfachen Kuchen, der ziemlich trocken und sehr aromatisch ist, fast wie ein Keksgeb\u00e4ck. Deshalb wird die<em> Schiaccia briaca<\/em> meistens zusammen mit Aleatico oder einem anderen S\u00fc\u00dfwein gegessen. Der wohl ber\u00fchmteste und meistverkaufte Kuchen ist die <em>Schiaccia briaca<\/em>. Der Kuchen enth\u00e4lt Wein und <strong>kaum Hefe<\/strong>. Deshalb heisst er <em>schiaccia<\/em>: flacher Kuchen. Eine wichtige Zutat ist\u00a0 Oliven\u00f6l: Der Kuchen Schiaccia briaca wird ohne Butter, nur mit Oliven\u00f6l zubereitet.<\/p>\n<p style=\"text-align: justify;\">Oft allerdings wird ein <strong>Schiaccia briaca<\/strong> verkauft, der kaum zu geniessen ist. In den meisten L\u00e4den findet man einen flachen, r\u00f6tlichen Kuchen. Bei der <em>Schiaccia briaca<\/em> stellt sich die Frage: Mit welchem Wein bzw. Lik\u00f6r soll die <em>Schiaccia briaca<\/em> zubereitet werden? Dabei spalten sich die Gem\u00fcter und die Meinungen. In der Gegend um Rio Marina wird die <em>Schiaccia briaca<\/em> vorzugsweise mit\u00a0 Alchermes gemacht. Um Capoliveri wird indessen ein S\u00fc\u00dfwein wie <strong>Aleatico<\/strong> oder <strong>Moscato<\/strong> verwendet.<\/p>\n<h3 style=\"text-align: justify;\"><span class=\"ez-toc-section\" id=\"Die_Zutaten_der_Schiaccia_briaca\"><\/span>Die Zutaten der Schiaccia briaca<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Die wichtigste Zutaten der Schiaccia briaca sind:<\/p>\n<ul>\n<li>Trockenfr\u00fcchte wie Waln\u00fcsse, Mandeln, Pinienkerne und Rosinen<\/li>\n<li><\/li>\n<li>Zitronen- und Orangeschalen, die die Aromen reicher machen<\/li>\n<li><\/li>\n<\/ul>\n<p>Mein Rezept f\u00fcr <em>Schiaccia briaca<\/em> entstand aus: die <em>Schiaccia briache<\/em>, die ich auf Elba probiert habe, einigen Rezepten, die ich im Internet gelesen habe, und den Zutaten der Schiaccia von Elba, die ich bevorzuge (in der Zwischenzeit habe ich festgestellt, dass das Restaurant San Rocco in Capoliveri, wo ich meine Libligs-Schiaccia briaca gekauft habe, leider geschlossen ist).<\/p>\n<p>Zu den wichtigsten Zutaten und Aromen dieser toskanischen Nachspeise geh\u00f6rt Wein, und zwar ein<strong> Passito-Wein oder S\u00fc\u00dfwein<\/strong>. Jetzt wird es etwas komplizierter: Welcher S\u00fc\u00dfwein? Die Insel hat eine lange Tradition in der Herstellung von S\u00fc\u00dfwein, vor allem Aleatico, aber auch Moscato und Alchermes. W\u00e4hrend es sich bei den beiden erstgenannten um Passito-Weine (aus getrockneten Trauben) handelt, ist der Alchermes ein Lik\u00f6rwein, der leicht an seiner tiefroten Farbe (aus <a href=\"https:\/\/de.wikipedia.org\/wiki\/Karmin\">Cochenille<\/a>) zu erkennen ist.<\/p>\n<p>Die andere Zutat ist <strong>natives Oliven\u00f6l extra<\/strong>, das einen recht delikaten Geschmack haben sollte. Unter den frischen Zutaten finden wir <strong>Zitrusfr\u00fcchte<\/strong>: Zitrone und Orange. Ich habe dieses Dessert schon mehrmals zubereitet. Wenn ich es im Sommer zubereite, wenn keine Orangen Saison haben, verwende ich einfach die Zitrusfrucht, die gerade Saison hat, n\u00e4mlich die Zitrone.<\/p>\n<p style=\"text-align: justify;\">Du kannst auf<strong> The Black Fig<\/strong> andere Spezialit\u00e4ten von der Insel Elba entdecken.
