Ostern habe ich mit meiner Familie verbracht. Ich habe viel gegessen. Da ich das Gl\u00fcck hatte, nicht kochen zu m\u00fcssen, habe ich bei den Gerichten, die auf den Tisch kamen, beobachtet, welches <strong>Gem\u00fcse<\/strong> in diesen Wochen auf den Feldern w\u00e4chst.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-5392\" src=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/insalata-di-carciofi-crudi-fresca.jpg\" alt=\"Salat mit rohen Artischocken und Parmesank\u00e4se\" width=\"680\" height=\"1020\" srcset=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/insalata-di-carciofi-crudi-fresca.jpg 680w, https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/insalata-di-carciofi-crudi-fresca-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>Es gab zum Beispiel gr\u00fcnen Spargel und Saubohnen. Artischocken fehlten, denn ich glaube, meine Mutter hatte verst\u00e4ndlicherweise keine Lust, zwei Dutzend f\u00fcr alle G\u00e4ste zu putzen.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Wie_werden_rohe_Artischocken_zubereitet\"><\/span>Wie werden rohe Artischocken zubereitet?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Die Artischocke ist meiner Meinung nach ein schwieriges Gem\u00fcse, weil man oft nicht wei\u00df, wie man sie reinigen und kochen soll. Artischocken enthalten eine Substanz, die bei Kontakt mit Luft oxidiert. Das beeintr\u00e4chtigt aber nur das Aussehen! Artischocken sind auch k\u00f6stlich, wenn sie etwas dunkler bzw. oxidiert sind.<\/p>\n<blockquote><p><strong>Tipp<\/strong>: Beim Putzen von Artischocken ist es immer gut, sofort eine Sch\u00fcssel mit kaltem, mit Zitrone ges\u00e4uertem Wasser zuzubereiten!<\/p><\/blockquote>\n<p>Die Reinigung von Artischocken ist eigentlich ganz einfach &#8211; es dauert nur ein wenig. Ich ziehe die l\u00e4nglich geformten wie die sogenannten &#8222;Moretti&#8220; den breiten, runden vor. So putze ich Artischocken. Ich z\u00e4hle 4 Schritte:<\/p>\n<ol>\n<li>Eine Sch\u00fcssel mit reichlich kaltem Wasser und dem Saft einer Zitrone f\u00fcllen.<\/li>\n<li>3-4 Windungen der h\u00e4rtesten Bl\u00e4tter entfernen, bis hin zu den violetten und gelben, d.h. zarten Bl\u00e4ttern.<\/li>\n<li>1\/3 bis die H\u00e4lfte des Kopfes der Artischocke abtrennen und Spitze entfernen, die aus den ledrigen Bl\u00e4ttern besteht. Die Artischocke sofort im Zitronen-Wasser legen.<\/li>\n<li>Den Strunk (nicht wegwerfen! Gekocht ist er sehr gut) sch\u00e4len und putzen, dann sofort in das Zitronen-Wasser legen.<\/li>\n<\/ol>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-5396\" src=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/come-pulire-i-carciofi.jpg\" alt=\"Artischocken reinigen\" width=\"680\" height=\"1020\" srcset=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/come-pulire-i-carciofi.jpg 680w, https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/04\/come-pulire-i-carciofi-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>Jetzt kannst du die Artischocken in Scheiben schneiden und z.B. als rohen Artischockensalat zubereiten, sie halbieren und d\u00fcnsten oder in Teig eintauchen und frittieren.<\/p>\n<p>Der Artischockensalat mit Minze und Parmesan ist eine der schnellsten und einfachsten Rezepte, um Artischocken zu geniessen. So hat meine Mutter sie immer zubereitet, mit etwas frischer Minze (die wir oft in <a href=\"https:\/\/theblackfig.com\/de\/salate\">Salaten<\/a> verwenden).<\/p>\n<p>Fr\u00fchling und Sommer sind die Jahreszeiten, in denen Gem\u00fcse und Obst im \u00dcberfluss vorhanden sind. Es gibt verschiedene kalte Salate, die ich in den w\u00e4rmeren Monaten zubereite. Hier findest du vier Vorschl\u00e4ge, wobei auch das autentische Rezept der Panzanella, der toskanischen Brotsalat:<\/p>\n<ol>\n<li><a
