Zu Ostern hat <strong>meine Mutter<\/strong> Vorspeisen mit Gr\u00fcner Sauce zubereitet. Auf der <em>Antipasti<\/em>-Platte waren <strong>gr\u00fcner Spargel<\/strong> und gekochte Eier, mit ein wenig gr\u00fcner Sauce angerichtet.<\/p>\n<h3>Gr\u00fcne Sauce in Italien und in Deutschland<\/h3>\n<p>Die Gr\u00fcne Sauce ist auch in <strong>Deutschland<\/strong> ein Hit. Ich spreche nat\u00fcrlich von der &#8222;<strong>Grie-So\u00df<\/strong>&#8220; bzw. Frankfurter Gr\u00fcnen Sauce. Die deutsche und die italienische gr\u00fcne Sauce sind dennoch verwandt. Die deutsche Gr\u00fcne Sauce kommt aus Italien. Manche vermuten, ein Kaufmann namens Bolongaro habe im 19. Jahrhundert die italienische Gr\u00fcne Sauce nach Deutschland gebracht.<\/p>\n<p>In Italien wie in Deutschland wird die Gr\u00fcne Sauce besonders gern <strong>mit Fleisch<\/strong> gegessen. Auf gegrilltem Fleisch finde ich sie viel besser als die BBQ Sauce, die mir zu k\u00fcnstlich schmeckt. Zu Fisch wird sie auch gern serviert.<br \/>\nMan kann mit der Gr\u00fcnen Sauce auch <em>Crostini<\/em> z.B. zum Aperitiv oder als Vorspeise zubereiten.<\/p>\n<p>Die gr\u00fcne Sauce wird auch <strong>zum Gem\u00fcse<\/strong> gegessen. Wie Du in den Fotos siehst, essen wir Italiener sie sehr gern mit gr\u00fcnem Spargel. Die italienische Gr\u00fcne Sauce ist eine wunderbare Beilage auch zu gekochten Kartoffeln (oder f\u00fcr einen Kartoffelsalat).<\/p>\n<p>Sie passt auch zu <strong>Pasta<\/strong> oder Reis. Aber bitte nicht Pesto und gr\u00fcne Sauce verwechseln! Das Pesto ist meistens eine kalte, vegetarische Sauce, die oft zu Pasta (<em>Trenette<\/em> &#8211; hier eine Liste der <a href=\"https:\/\/www.barilla.com\/de-at\/produkt-ergebnisse\/pasta\/angebot\/klassische-sorten?sort=alpha\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Pasta-Sorten<\/a>) serviert wird.<\/p>\n<h4>Italienische Gr\u00fcne Sauce: Rezept<\/h4>\n<p>Deutsche und italienische Gr\u00fcne Saucen sind verwandt. Beim Rezept kommen aber die Unterschiede ans Licht. Die italienische Gr\u00fcne Sauce enth\u00e4lt nur eine Sorte <strong>Kr\u00e4uter <\/strong>(nicht 7!): Petersilie. Die Zutaten, die ihre Cremigkeit ausmachen, sind nicht Mayo, Senf oder Sahne, sondern zum gr\u00f6\u00dften Teil natives Oliven\u00f6l.<\/p>\n<p>Eigelbe f\u00f6rdern auch die Cremigkeit der Gr\u00fcnen Sauce. Wenn man nicht zu viel Oliven\u00f6l verbrauchen will und eine etwas <strong>leichtere Gr\u00fcne Sauce<\/strong> zubereiten m\u00f6chte, kann man zum Schlu\u00df ihre Konsistenz nach Bedarf mit Milch anpassen.<\/p>\n<p>In der Gr\u00fcnen Sauce findet man eine Zutat, die in Italien in vielen, unterschiedlichen Gerichten vorkommt: das <strong>Brot<\/strong> (z.B. im <a href=\"https:\/\/theblackfig.com\/de\/2016\/05\/der-toskanische-brotsalat-panzanella.html\">Brotsalat<\/a>). In diesem Fall handelt sich um die Krume, den weichen, inneren Teil vom Weissbrot.<\/p>\n<p>In Florenz wird die Gr\u00fcne Sauce zum <em>Lampredotto<\/em> serviert, das beliebte florentinische Street-Food aus dem Labmagen (vierten Kuhmagen).<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-5534\" src=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/05\/salsa-verde.jpg\" alt=\"ricetta salsa verde all'italiana\" width=\"700\" height=\"1050\" srcset=\"https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/05\/salsa-verde.jpg 700w, https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/05\/salsa-verde-200x300.jpg 200w, https:\/\/theblackfig.com\/wp-content\/uploads\/2017\/05\/salsa-verde-683x1024.jpg 683w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Die Schwierigkeit der <em>Salsa verde<\/em> besteht meiner Meinung nach in der richtigen Konsistenz und ihrem geschmacklichen Gleichgewicht. Zutaten mit einem starken Geschmack wie Knoblauch und Sardellen m\u00fcssen richtig dosiert werden.<\/p>\n<blockquote><p><strong>Tipp<\/strong>: Die besten sind die im Salz eingelegten Kapern, sie halten ihren Geschmack l\u00e4nger!
