Es geh\u00f6rt auch zu jener Sorte Dessert, die ich meistens <strong>suspekt<\/strong> finde: &#8222;leichte&#8220; Dessert. Die gibt&#8217;s wohl, aber nicht im heute so verbreiteten Sinne von &#8222;Dessert <em>ohne<\/em> irgendwas&#8220;. Z.B. ein M\u00fcrbeteig ohne Butter: das gibt es doch nicht! Zumindest habe ich ein M\u00fcrbeteig mit \u00d6l gemacht und probiert, aber es ist einfach was anderes. Wie denkst Du \u00fcber dieses komplexes Thema?<\/p>\n<p>Jedenfalls, Ricotta geh\u00f6rt zu den <strong>schmackhaftesten und leichtesten Lebensmittel<\/strong>, weil er wenig Fett enth\u00e4lt. Deshalb finde ich so ein Ricotta-Dessert mit kaum Zucker und vielem Geschmack aus Obst und Gew\u00fcrze besonders gelungen.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Ricotta_ist_kein_cremiges_Kaese\"><\/span>Ricotta ist kein cremiges K\u00e4se<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Vielleicht weiss Du, dass alle <a href=\"https:\/\/theblackfig.com\/de\/ricette\/italienische-ricotta-rezepte\">Ricotta-Desserts<\/a> keine K\u00e4se-Desserts in richtigem Sinne sind. Ricotta ist tats\u00e4chlich <strong>kein K\u00e4se<\/strong>, sondern ein Ergebnis der K\u00e4seherstellung. Die Ricotta kommt, sozusagen, nach dem K\u00e4se. Der K\u00e4se ergibt sich aus der <strong>Reifung des K\u00e4sebruchs<\/strong>, w\u00e4hrend die Ricotta kommt aus der <strong>Molke des K\u00e4sebruchs<\/strong>. Ich finde, den Geschmack des gekochten Apfels besser, wenn diese eine gewisse S\u00e4ure hat. Die Kompott dieses Desserts kann man ruhig auch ein Tag vorher zubereiten.
